Splenda's Applesauce Snacking Cake
Here's the recipe:
(The other day I replaced the applesauce with cranberries)
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp giner
1/2 cup reduced-calorie margarine
1/4 cup molasses
1/2 cup egg substitute
1 tsp vanilla extract
1 cup Splenda
1/2 cup unsweetened applesauce
350 F spray an 8x8 inch metal cake pan with cooking spray.
combine dry ingredients together, combine wet ingredients together then spread batter evenly into prepared pan and bake for 30 minutes. Enjoy!

3-Step Lemon Cheese-cake Bars!
Literally! Easy-peasy-puddin' and pie! The hard part is waiting for it to chill! (3 hours per recipe)
I'm postin' my new potholderz too, they're gifts for Son's birthday's this month. Oldest will be 24 and middle will be 22! Any prospective fiances' out there? Heh! Is it asking too much to be a Grandma? If these Lemon Bars are as tasty as the batter was, maybe I will make them for their birthday brunch. ;) <3<3

Waldorf Salad for Easter Brunch
Recipe:
Green sour apples, 5 or 6 chopped
I used Granny Smith, 5
and 2 fuji's
Celery 7 or 8 chopped stalks
Red seedless grapes or Raisins
I used grapes cut in half
Walnuts chopped
1/2 cup real mayonaise
1 cup sugar depending on how much you make.
I also tried whipped topping and like the tangy taste of the mayo & sugar better, which is the true recipe anyway, and you can see the fruit.
My Grandma Willson used to make this with fried chicken, of course deviled-eggs and we also had potato-salad. I never liked Waldorf Salad when I was a kid, (hate celery and walnuts and the apples were sour) since blogging, I'm collecting our family recipes.

The fascination of what's difficult
Has dried the sap out of my veins, and rent
Spontaneous joy and natural content
Out of my heart. There's something ails our colt
That must, as if it had not holy blood
Nor on Olympus leaped from cloud to cloud,
Shiver under the lash, strain, sweat and jolt
As though it dragged road-metal. My curse on plays
That have to be set up in fifty ways,
On the day's war with every knave and dolt,
Theatre business, management of men.
I swear before the dawn comes round again
I'll find the stable and pull out the bolt.
A Line will take us hours maybe;
Yet if it does not seem a moment's thought,
Our stitching and unstitching has been naught.
Better go down upon your marrow bones
And scrub a kitchen pavement, or break stones
Like an old pauper, in all kinds of weather;
For to articulate sweet sounds together Is to work harder than all these...

Deviled Ham Dip or Spread
for chips or 'Finger sandwiches', appetizers.
Recipe;
2 Cups of minced ham, spam or salmon
3 Tbsp minced onion
1 tsp parsely
1 package cream cheese. Cut the crusts off th ebread slices, layer with spread as many (3) slices of bread as you like.
Here is the Finger sandwiches with relish and without cream cheese.

Serenades
The Irish nightingale
Is a sedge-warbler,

PANDI-Scones
Recipe:
400- 15 to 20 min.
2 cups of Flour
1/4 cup of Sugar
1 Tbsp Baking powder
Opt* Zest of one Lemon (Chris uses 3 lemons)
1/4 tsp salt
4 Tbsp Butter
2 Large Eggs
1/2 Cup heavy cream
3 Tbsp Lemon Yogurt. (I used raspberry greek kind)

Spritz Cookies for Saint Patricks Day
Here is the recipe I used, and also the one I suggest to use.
First one:
1 1/2 cups (3 sticks) unsalted butter at room temperature
1 cup sugar
1/2 tsp salt
2 large eggs, at room temperature
1 tsp vanilla extract
4 cups all-purpose flour
Second Spritz cookie recipe:
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
1 egg
1 1/2 tsp clear vanilla extract
1/2 tsp no-color Almond extract
2 3/4 cups all-purpose flour
2 tsp baking powder
1 tsp salt.

1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon

1/2 tsp nutmeg
1/3 cup cooking oil
1 egg
1 cup canned applesauce
1/2 cup chopped pitted dates
1/2 cup saisins
1/2 cup chopped nuts
pour into 12x8x2 in. MICROWAVEABLE dish which has been greased on bottom only. Microwave at high 10 to 12 minutes. I you don't have a microwaveable dish like me, bake at 350' for 10 to 15 min. then microwave till a toothpick comes out clean. I used cream-cheese-butter frosting.
